Farmer's Breakfast Scramble

Instructions
  1. Add butter to a pan and turn stove to medium heat. Add the diced potatoes, and cook until golden, flipping often to brown on all sides.
  2. When the potatoes are close to done, add the breakfast sausage and break into medium small chunks, Be sure to let the sausage sit in one spot long enough to brown as this brings out a lot more flavor.
  3. While the sausage is cooking, break eggs in a bowl, add salt and milk, and whip until thoroughly mixed.
  4. When sausage is fully cooked, add eggs, and lightly stir and flip until cooked through. This will only take a couple minutes. You want to take the pan off the heat after only about a minute of cooking to avoid overcooking the eggs.
  5. Top with any additional ingredients you like (but not too many), and enjoy!
Recipe Notes

All optional ingredients are great added fresh and the end of the cook, but the bell peppers are nice added at the same time as the sausage, or fresh for some crunch.
